What distinguishes coffee as specialty coffee? While specialty coffee constitutes only a small fraction of the global coffee trade, making up just the top 10-20% of all coffee sold, it accounts for nearly half of the total value of coffee traded annually. It is characterized by high-quality coffee that scores 80 points or above on a 100-point scale, as assessed by certified Q-Graders.
This designation signifies superior quality, ethical sourcing, and complete traceability. It highlights unique flavors that result from specific, meticulously managed farming, processing, and roasting techniques.
Coffee grows as a cherry, with two beans inside each fruit. Specialty-grade harvesting is almost always done by hand, picking only the ripe red cherries — often across multiple passes through the same trees over several weeks. This selective picking is one of the biggest cost and quality differentiators versus commodity coffee, where everything gets stripped at once.
